Mediterranean Tomato Feta Salad

Cucumber tomato salad goes by a name: salata! It is an everyday Mediterranean salad made of three main ingredients: tomatoes, cucumbers, and parsley. It’s seasoned simply with kosher salt, though I like to add sumac for a little tang and depth.

This simple Mediterranean salad is as traditional as they come. It’s very representative of the regions’ agricultural roots and the fresh flavors we continue to love to this day. It where salads like fattoush or tabouli derive inspiration. You can dress it up by adding some red onion.

Mediterranean Tomato Feta Salad is an easy-peasy and totally customisable salad. You can adjust the herbs and vinegar to fit your tastes and what you have in your pantry. Get creative and make it your own!


Ingredients
2 Heirloom Tomatoes large, sliced
1/2 Red Onion small, sliced (or 1/4 big one)
1/2 cup Feta Cheese broken into chunks
1 tablespoon Parsley chopped
1 tablespoon Mint chopped

Dressing
3 tablespoon Olive Oil Extra Virgin
1 1/2 tablespoon Red Wine Vinegar
1/2 teaspoon Salt Kosher
1/2 teaspoon Dry Oregano
1/4 teaspoon Freshly Grounded Black Pepper

Instructions
  1. Slice your tomatoes in 1/3" thick slices and arrange them in a single layer on an oval serving plate.
  2. Top tomatoes with sliced red onions (moons or half moons).
  3. Add freshly chopped parsley and mint.
  4. Add chunks of good quality Feta cheese.
  5. Combine all the Dressing ingredients in a mason jar, shake to mix well and pour over the salad. Serve immediately.
